Sauerkraut can be prepared in many ways.  As I usually serve it with meat of some sort, I don’t care too much to add much meat to it, but many add bacon, or pork when eaten as a single dish.


Can of sauerkraut (edgell is best brand)

1 to 2 onions chopped into small squares

4 – 6 juniper berries (optional)

1 teaspoon caraway seeds (optional)

Bay leaf (optional)


White wine (optional)



Fry onions in butter until translucent.  Mid way add spices of choice (any or all)

If adding meat this needs to be cooked with onions

Deglaze with wine (optional) and add drained canned sauerkraut.  Cover and simmer.

Sliced smoked pork (1 cm thick pieces) can be warmed by placing on top of simmering sauerkraut
