Par boil potatoes for 10 mins, or until they are starting to soften, whilst still being firm.

Refrigerate overnight.

Peel and grate potatoes, mix with salt and pepper.

Heat a generous amount of butter in a heavy frypan and just before it burns add the grated potatoes.  Let them fry on high heat for a minute or so shaking the pan so that the mixture avoids sticking.  Tamp down and form into a pancake.

Reduce the heat.  Occasionally slide the pancake around the pan to keep it from sticking.  After about 10 mins the bottom of the pancake should be golden brown.

Turn upside down onto a plate and slide uncooked side back into the pan adding more butter if necessary.

Can be served with:

Boiled or fried European style sausages

Boiled smoked pork/speck

Green beans

Caramalised onions



Eggs at breakfast

Or as a side to pretty much anything.

Can also add chopped bacon and/or fried onion to the grated potato before cooking and top with cheese when serving.
