Lentils and spinach
I like this dish because the only fresh ingredient needed is onions
2 onions finely chopped
2 cloves of garlic finely chopped
Powdered vegetable stock for seasoning
1 x can of brown lentils
1 x can of spinach (or block of frozen spinach)
Fry onions and garlic with chilli until onions are translucent. Season with vegetable stock.
Add canned lentils (with juice) and spinach
Bring to boil.
Serve with Rösti and/or bean salad or over rice
