Caramelised Onions

It is quite simply amazing how simple things can be so good.

Preparation is simple but time consuming.

Cut onions into thin half rings and fry very slowly in olive oil with some salt.  With time the onions start to caramelise.  You keep cooking them slowly almost till they are starting to blacken.  At this point in time a heaped fry pan full of onions is reduced to a couple of cups.  The caramelised onions can then be used in many ways.

Two of my favourites are with Rösti, sausages and sauerkraut, or mixed with cold rice and lentils to make a salad.
