Swiss Style French Beans
1 kg trimmed fresh green French beans
½ teaspoon finely chopped garlic
1 x tablespoon butter
½ tablespoon plain flour
Boil the green beans in salted water until they are tender but still slightly crisp.
Drain the beans setting aside the cooking liquid
Refresh the beans by running under cold water
Melt butter and fry flour over low heat until thickening and gradually add reserved cooking liquid.
Add garlic, nutmeg and salt to thickened sauce and simmer for five minutes
Add the cooked beans to the sauce and simmer until beans are warm enough to serve.
Goes well with rösti, sauerkraut, boiled continental sausages and boiled smoked pork (Kaiser fleish). This combination is known in Switzerland as a Berner Platte
