Beef Heart Skewers with Chilli
Red Wine Vinegar
2.5 teaspoons fresh red chilli finely chopped (more or less according to taste)
3 teaspoons garlic finely chopped
1.5 teaspoons cumin powder
1.5 teaspoons salt
Freshly ground black pepper
Beef Heart trimmed of fat and cut into cubes (I prefer 1cm cubes)
Mix chillis, cumin, garlic, salt and vinegar and a sprinkle of pepper in a bowl and marinate heart. Refrigerate for up to 24 hours.
[You can make marinate by crushing chilli, garlic, cumin seeds, pepper corns and salt with mortar and pestle before adding vinegar. Best to not chop ingredients first.]
Skewer meat and then mix some olive oil and sambal (or other chilli and garlic paste) and brush cubes of skewered meat. Grill in pan or over coals until browned.
