Chinese Style Boiled Chicken
Immerse chook in boiling water and remove. Tip out water.
Salt and pepper chook cavity
Bring pot to boil with 3 – 6 star anise; schezuan red pepper; 6 x black peppercorns; teaspoon sesame oil; 2 – 6 chinese mushrooms; 2 – 3 spring onions; teaspoon dry sherry.
Immerse chicken and boil for one minute
Turn off and let sit for one hour
Remove chicken and immerse in ice cold water
For dipping sauce, grate some ginger, slice spring onions and mix with sesame oil and salt.
